After having a pasta lunch, Alex and I were still in the lazy mode. We decided to fry up some of the Gardenburger® Malibu Burger Organic Vegan. It was very easy to prepare by frying in the pan for 7 minutes. I had it without the buns and toppings. Instead, I had 5 sauces: ketchup, curry ketchup, garlic dressing, sriracha and Japanese spicy sauce. I liked curry ketchup the most with the burger.
In The End by Linkin park paired well with this meal.
My coworker asked me to join her for lunch today at this newly opened place, called Dig Inn Seasonal Market. Maybe it was pretty early, the line was pretty short for ordering the market plates. We were able to place the order fairly quickly. I got the veggie plate with seasonal quinoa salad, Sicilian roasted cauliflower w/ chickpeas, and string beans & roasted potatoes on a bed of grains. It was very healthy and fulling. I definitely would have it again.
This lunch was very fancy and Fancy By Iggy Azalea would definitely pair well with this meal.
We joined a Bikes, Bites and Brews tour by Bobby’s Bike Hike, which let us sample from one of the four Chicago favorite foods that were pizza, hot dog, cupcake and beer. Our second stop was a tiny shop – Swirlz near Lincoln Park, though I was hoping to visit Molly’s Cupcake (I have been to the NY location and loved it. I wanted to compare the flavor). Swirlz was very good too. They even offered gluten-free and vegan gluten-free cupcakes, which were rare to find. They used buttercream for the frostings. Our tour guide – Daniella, who normally didn’t like cupcakes but liked Swirlz very much. I had the Strawberry Strawberry and Alex had Vanilla. They weren’t vegan or gluten-free. As you can see from the pictures below, we weren’t able to wait until the photo shot to start attacking the cupcakes.
We enjoyed the cupcakes outside of the shop and experienced the summer could offer in Chicago, which reminded me of the song Summary by Calvin Harris.
Potbelly is one of my favorite lunch spots. Their sandwiches are freshly made in front of you. I wish they have move vegan choices, other than the Mediterranean, which is made with zippy hummus, feta cheese, artichoke hearts, roasted red peppers and crispy cucumbers. This sandwich was very juicy.
Sugar Cookie was my favorite cookie from Potbelly, which was baked with only a few ingredients. I loved it was crunchy outside but soft inside. It was not too sweet.
I thought that Magic by Cold Play song would suit with this moment, which relaxed me.
